I'm trying to set up DSub/subsonic so that it will play/cache flac files when I'm on WiFi, but resort to transcoding to 320kbps mp3 when using my mobile connection.
I've tested several combinations of settings in the app and server with no success. Is this possible?

No. The only way to do no transcoding is to have no transcoding set on the server.
