Adding Music Folder

I have 3 places in which I store music on my Desktop, in A FLAC folder, a MP3 folder and an AAC folder. Both the AAC and FLAC folder are loaded are parsed fine but for whatever reason the MP3 folder is not loaded into the library. I have renamed the folder and tried it in different paths but for whatever reason I can't get it to work. Any Suggestions?

Combine the three folders under 'Music' and point Subsonic to 'Music'.

It sounds like a permissions issue.
I use Linux Mint and a couple of times I found that I could not see anything because the owner and group of a folder were not set right.
Try setting them the same as the other folders.

Or just a try this:
Create a folder with shortcuts to the other folders and then set up this Shortcuts folder and see if you can see anything. You should see links to each of your folders.
Opening the links should show you the contents. If you dont see the link then I dont know!! if you dont see the contents then its permissions for the contents
Careful not to have the same folder shared twice. (once with the real path and once with the shortcut) as you end up with double indexing if the indexing service kicks off.
