I currently have all my music in iTunes and I let iTunes organize my music. If I install subsonic and point it to my music well it change ANYTHING with my music?

No. Subsonic will not do anything but attempt to read the files.
I would make sure that your users do not have access to change tags, but other than that, no issues.
