Multiple Audio Channel Support

I'm curious if anyone knows how Subsonic fairs with multiple independent audio channels on the server under constant use as jukeboxes (to be tied into different zones of a PA system for bathroom/elevator music and for company parties and for the phone system's on-hold music - a total of 3 independent audio channels).

It's a bit hard to understand what you're asking as "Jukebox Mode" refers to logging into Subsonic and controlling what is being played on the local host server where Subsonic is installed.
If you're asking about 3 different devices logging onto the server and playing music in different locations, then there is no problem, that is what Subsonic is designed to do, We have users here hosting hundreds of users logging in from multiple locations. 3 streams at the same time is not a problem.
I hope I'm understanding your question correctly, if not please clarify and we'll see if we can be of further assistance.

By 3 independent audio channels I meant 3 sound cards (or a multi-channel sound card) playing as 3 different jukeboxes on the host server (but still on the same machine) - ideally this would be 1 audio port for the bathroom/elevator music (just looping classical music in a restricted playlist or jukebox), 1 audio port playing the phone system's on hold music (again, with a restricted jukebox or playlist) and 1 audio port for the general pa system that could be switched active for company parties (not access restricted, just time-restricted or something that can be locked down when the company doesn't have a party going on).

I've seen this discussed a few times, but I don't think anyone has actually done anything like this yet. You would probably have to run 3 seperate instances of Subsonic each in their own VM and bind the soundcards one to each VM.
