I have an extensive music collection that has been carefully tagged over the years, Subsonic sounds like a cool way to listen from anywhere but is it going to mess with my tags? I don't want to be able to do any tag editing through Subsonic, either by accident on purpose. Thanks

There is an 'edit tags' feature, but it is somewhat limited to just some key ones (track #, title, artist, genre, year). It does not automatic tag-changing at all - you have to expressly go to that page to change anything.
You can disable it for your users in the Settings page, "User is allowed to change cover art and tags". An administrator can always access that feature, so best you don't use your administrator account for regular listening and you'll be fine.
The API does not give any means to modify a file's tag, so no 3rd party client can change anything. All the API can allow is adding 'star' to files and folders or set a rating, neither of which actually touch tags. (yeah, given that every single music player has 5-star rating, one wonders why the ID3 folks never standardized it, but nevermind...).
