OK, I've received your PM and will make some tests when I get some more time. I will also set up a user account for you on my Subsonic server and PM you with the relevant info.
I googled and found this FFmpeg x264 encoding guide and have sent e-mail to the owner of the site requesting help. He may be able to advise how to do what we want on a Mac.
I just received my iPad 2! I'll be spending time on it for the next day or so, and I will try setting it's Air Video app up to stream your videos, if I can. I'll report back on that as soon as I have anything to report.
