Ubuntu - Multiple Instances for the same user

I'd like to separate my various media into their own subsonic libraries.
My thinking is that I will then have an instance each for:
Music,TV, Films, Educational etc etc.

I have them all in the same instance at the moment and it's just too chaotic.
What is the best method for accomplishing this?

I am on Ubuntu 14.04 server having default installed subsonic.
Subsonic running as root because it is a private server.
