How do I make a queue of more than 1 album or artist at a time? I'd like to have my phone app shuffle through my whole library.

Just keep adding tracks/albums/artists to the queue and save it as playlist when complete. Precise method depends on which interface your using the App is different to the browser interface.

Which would be the fastest do you think, browser or subsonic app?

Depends, if you don't want to edit the list then SubSonic App is quite fast enough to construct the lists as its easy to do at any level and when its saved its saved on the server.
If you want to edit the list or combine then I prefer to do it on my normal Windows workstations as the screens are larger and full keyboard to use!
