I think subsonic creates a new player for each combination of user / device / connection type. For example if I log in as admin via localhost i get a player. If i log in as another user via the same localhost i get another player in the list. If I log in as admin from my laptop it adds another, as admin via my droid phone, another, via subair as admin another and so on.
You can delete these autonumbered players but they will just appear again when you log in again i think.
Once you name these connections, you will notice that only the ones associated with your current login are available in the flash players drop down. The players for other logins and connections are not displayed.
There is no way currently to create a fixed list of players and exclude all others. This might be useful if you want to restrict certain users to certain connection types.
