Although transcoding comes in handy, it really puts a load on the cpu. Additionally, ffmpeg only uses one core per stream on a multi-core cpu, so even with a good quad core (like my 3GHz Xeon) the transcoding can become a real bottleneck depending on the resolution of the source video. When you bypass the transcoding, cpu load is almost non-existent and allows the server to stream multiple videos simultaneously, or even at the same time! Either way SS allows everyone to customize to suit a particular need. It's all good.
